Timmermans has kept the tradition of true lambic alive for over 300 years. This unique beer, made with 30% wheat, is brewed in Itterbeek in the world's oldest lambic brewery.
At its origin is a miracle: micro-organisms in the air of the Senne valley settle into the wort and cause spontaneous fermentation. True lambic can only be brewed within 15 km of Brussels, in the Pajottenland.
The lambics age one to three years in wooden barrels before being blended with other lambics β or with fruit.
